Hi! I'm Darcy Green, owner and founder of 'brosia Bowl. So, where did this idea come from? While living in rural Minnesota, I was finishing my degree in Sustainable Design and learning how much our food choices affect not only our health and well-being, but the overall health and well-being of the entire planet and all of its inhabitants. With this knowledge in hand and after falling in love with gardening, I decided to make the switch to a plant-based diet. I took a 6-month, plant-based cooking course that taught me the wonders of making creative, delicious, and healthy meals with all things vegetables.
After my husband (Chris) and I moved back to South Dakota, I decided that I wanted to share what I had learned about a plant-based diet. Realizing that there aren't many options for fast, healthy meals, I decided to create my own. However, 'brosia Bowl is about more than just another food joint, hoping to make it in the crazy restaurant world. It's about creating a brand that cares about people, animals, and the planet, all while creating delicious, colorful, and nutritious food.
